"Crystallized" honey is a sign of good high quality, and it is the raw, natural, crystallized honey that I like, and many other informed consumers also like, best. It is a compliment to D'arbo honey that it has arrived to you in crystallized form, which proves that the honey was not heated during bottling. Other brands of honey will heat the product during bottling, during which the natural properties of the honey are destroyed and the honey is then no longer able to crystallize. Therefore, this previous customer should have given a high review, considering that the honey IS in fact crystallized which is hard to find in the United States, but fortunately this high quality imported Austrian gourmet honey is still processed in a high quality natural manner without application of heat and is available through stores like this.
